The Opale is an electric oven mainly designed for baking traditional true Neapolitan pizza. It was created at the request of a number of operators in the sector who wanted to work with a product that retained the strong points of classic wood-fired ovens, while excluding the weak points, which are very often linked to the feeding and management of the flame or the oven cleaning.
With AVPN approval and reaching up to 520 °C the Opale is an incredibly capable oven. While consuming less energy and optimising space and costs. On average, the oven can reach a working temperature (470 C°) in about 90 minutes and usually does not require the installation of expensive flues. Due to a more all-over heat, pizzas don't need turning as often.
